Spontaneous fermentation in open fermenter followed by 12 months maturation in oak. Additional 24months of ageing in a bottle before release.

Tasting Notes

Delicate and typical aromas of red cherries, ripe raspberries, blackberries, dark olives and liquorice. Medium bodied, very dry and fresh, structured with smooth fruity tannins. Balanced and elegant on the palate with flavours of red currants, sour cherries, red grapefruits, basil and dark chocolate.
