Another cracker from the Hill of Dreams, our original planting in 2000. This vintage was fermented in stainless steel tanks using only with wild yeasts from the vineyard, then it was aged in old oak barriques for about four months.
Sauvignon Blanc (pronounced sovin-jon blon) comes from France but there are two wine regions trying to usurp its origin – Loire Valley and Bordeaux.
Nowadays widely spread around the world, wines from this aromatic variety boast a spectrum of pronounced aromas and flavours from grass and stinging nettles to gooseberries and ripe stone fruits. It is worth to mention that “Sauv Blanc” is (together with Cabernet Franc) a direct parent of Cabernet Sauvignon, the world’s most popular grape.
Tasting notes
This multidimensional Fume style Sauvignon Blanc fermented in an old oak barrel shows remarkable combination of flavour complexity and freshness.
Ripe citruses and stone fruits on the nose, especially nectarines plus a hint of elderflower and toffee. Very complex and intensive on the palate where flavours of pineapple, roasted lemon, nectarine, passion fruit, green apple, stinging nettle and a hint of dark chocolate are carried with furious energy by laser beam like acidity.
Optimal serving temperature: 10 – 12 °C.
Food pairing: Fish and chicken barbecue with cream based vegetable sauces. Special tip – rabbit pate with passion fruit.
