At Topper’s, a new vintage always means a new recipe. While the 2015 Traditional Method sparkling was 60% Chardonnay and 40% Pinot Noir the 2016 is made from Pinot Noir only (Blanc de Noirs) which can be easily detected by the salmon hue. 2016 was a warm vintage providing this wine with generous flavours of dark cherries, black berries, strawberry jam and hints of liquorice as well as cherry blossom & herbal notes. All carried by smooth mousse beautifully combined with refreshing yet soft acidity.

This being the first time that we decided not to add any dosage (Brut Nature) to retain the sweet & savoury dry finish with a cherry liquor & dried raspberries like aftertaste. Extended 58 months long aging on the lees added a creamy texture and hint of dark bread crust. This is a serious gastronomic sparkling wine. Try it with steak tartare to experience the ultimate sparkling wine & food pairing.

Winemaking: Hand harvested, gently pressed and fermented in stainless steel tanks. Base wine was bottled with liqueur de tirage 6 months after the harvest. After secondary fermentation the wine was aged en tirage for 55 months. Disgorged in June 2021 with no dosage added.

Cellaring potential: up to 2026.
